Francois Cotat is something of an emigma. A “pre-natural” winemaker, if you will. Someone who has made wine according to natural principles before the concept was latched on to by trendy sommeliers around the world. Just 3 hectares of vineyards around Chavignol in the Loire provide this exemplary set of Sancerres. It seems a pity to refer to the Caillottes as entry-level. Better to think of it as a Villages-level Vosne Romanee. The other 3 wines, however, are firmly Grand Cru. So steep are Culs de Beaujeu, Monts Damnes and Grand Cote that all of the work must be laboriously done by hand but the results are worth it. Pure, cerebral and age-worthy, these wines should be experienced at least once.
